A no-bake, creamy, and tangy lemon icebox pie topped with fresh blueberries, perfect for a refreshing summer dessert.

  • 1 ½ cups graham cracker crumbs (about 12 full crackers)
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 can (14 oz / 400 g) sweetened condensed milk
  • ½ cup fresh lemon juice (about 23 lemons)
  • 1 tablespoon lemon zest
  • 1 teaspoon pure vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 2 tablespoons powdered sugar
  • 1 cup fresh blueberries

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until evenly coated and mixture resembles wet sand. Press firmly into bottom and up sides of a 9-inch pie pan. Chill in fridge for at least 15 minutes.
  2. Make the lemon filling: In a large bowl, whisk together sweetened condensed milk, fresh lemon juice, lemon zest, and vanilla extract until smooth and slightly thickened, about 3 minutes.
  3. Whip the cream: In a separate chilled bowl, whip heavy cream with powdered sugar until soft peaks form, about 4-6 minutes with an electric mixer.
  4. Fold whipped cream into lemon mixture gently using a spatula, maintaining light and airy texture.
  5. Assemble the pie: Pour lemon cream filling into chilled crust and smooth the top. Refrigerate for at least 4 hours or overnight to set.
  6. Add blueberries and topping: Just before serving, spread reserved whipped cream on top and scatter fresh blueberries evenly over the pie.

Notes

Chill bowl and beaters before whipping cream for best results. Fold whipped cream gently to keep airy texture. Press crust firmly and chill before adding filling to prevent sogginess. Pie sets best after at least 4 hours chilling, overnight preferred. Frozen blueberries can be used if thawed and drained.
