Fresh Cucumber Roll-Ups with Herbed Cream Cheese

A quick and easy appetizer featuring thin cucumber ribbons rolled with a flavorful herbed cream cheese spread. Perfect for light snacks, parties, or casual get-togethers.

  • 1 large English cucumber, thinly sliced lengthwise with a vegetable peeler or mandoline
  • 8 oz (225 g) cream cheese, softened to room temperature
  • 2 tbsp fresh dill, finely chopped
  • 2 tbsp fresh chives, finely chopped
  • 1/2 tsp garlic powder
  • 1 tsp lemon zest
  • 1/4 tsp salt, or to taste
  • Freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes
  • Optional: a few chopped toasted walnuts

Instructions

  1. Wash the cucumber well. Using a vegetable peeler or mandoline, slice the cucumber lengthwise into thin ribbons about 1/8 inch (3 mm) thick. Lay the ribbons on paper towels and gently pat dry to remove excess moisture.
  2. In a medium bowl, combine the softened cream cheese, chopped dill, chives, garlic powder, lemon zest, salt, and pepper. Blend until smooth and evenly mixed. Taste and adjust seasoning if needed.
  3. Lay one cucumber ribbon flat on a cutting board. Using a spreading knife or offset spatula, spread about 1 tablespoon (15 g) of the herbed cream cheese evenly along the length of the ribbon, leaving a small border at the edges.
  4. Starting at one end, gently roll the cucumber ribbon into a tight spiral. Place the roll seam-side down on a serving platter to help it stay together.
  5. Repeat spreading and rolling with the remaining cucumber ribbons and cream cheese until all are used. You should get about 15-20 roll-ups depending on cucumber size and thickness.
  6. Optional: Chill the roll-ups for 15-20 minutes before serving to enhance flavor and firmness.
  7. Garnish with extra chopped herbs or a light drizzle of olive oil if desired. Serve cold or slightly chilled.

Use English cucumbers for best results due to thin skin and small seeds. Pat cucumber ribbons dry to avoid soggy roll-ups. Soften cream cheese to room temperature for easy spreading. Roll gently to avoid splitting. Optional chilling helps firm up the rolls. Variations include adding smoked salmon, nuts, or spices. Store assembled roll-ups covered in the fridge and consume within 24 hours.
