A quick and easy grilled corn on the cob recipe featuring a zesty cilantro lime butter that adds a smoky, fresh, and bright flavor perfect for summer gatherings.

  • 4 ears fresh corn on the cob, husked
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 large lime, zested and juiced
  • 1 small garlic clove, minced (optional)
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon chili powder or smoked paprika (optional)

Instructions

  1. Preheat your grill to medium-high heat, about 400°F (200°C), which takes around 10-15 minutes.
  2. In a small bowl, combine softened butter, chopped cilantro, lime zest and juice, minced garlic (if using), salt, black pepper, and optional chili powder or smoked paprika. Mix well until smooth and set aside.
  3. Husk the corn by removing outer husks and silk. Rinse and pat dry.
  4. Place corn directly on the grill grates and cook for 10-12 minutes, turning every 2-3 minutes until kernels are evenly charred and golden brown with some blackened spots.
  5. Transfer grilled corn to a serving platter and generously spread the cilantro lime butter over each ear while still hot.
  6. Serve immediately, optionally garnished with extra fresh cilantro or a pinch of chili powder.

Notes

If butter is too soft or melting too quickly, refrigerate for 10 minutes before spreading. Turn corn frequently every 2-3 minutes for even cooking. Use tongs to avoid losing juices. Butter can be made a day ahead and refrigerated. For dairy-free, substitute vegan butter or olive oil. If no grill, use a grill pan or roast in oven at 425°F for 20 minutes, turning halfway.
