Fresh Grilled Peach and Arugula Salad with Honey Balsamic Glaze

A vibrant summer salad featuring smoky grilled peaches, peppery arugula, and a tangy-sweet honey balsamic glaze. Perfect for light meals and gatherings.

  • 3 large ripe but firm peaches, halved and pitted
  • 5 cups fresh arugula, washed and dried
  • 2 tablespoons extra virgin olive oil
  • 3 tablespoons raw honey
  • 2 tablespoons aged balsamic vinegar
  • Pinch of flaky sea salt
  • Freshly ground black pepper, to taste
  • ¼ cup crumbled goat cheese or feta (optional)
  • ¼ cup toasted pecans or walnuts, roughly chopped (optional)

Instructions

  1. Preheat the grill or grill pan to medium-high heat (about 400°F).
  2. Brush the peach halves lightly with olive oil on the cut sides.
  3. Place peaches cut side down on the grill and cook for 3 to 4 minutes until grill marks appear and peaches soften slightly.
  4. Flip peaches and grill for another 1 to 2 minutes on the skin side, being careful not to overcook.
  5. While peaches grill, combine honey and balsamic vinegar in a small saucepan over low heat. Stir gently until warmed through and slightly thickened, about 3 to 5 minutes. Remove from heat.
  6. In a large bowl, toss arugula with half of the honey balsamic glaze. Season lightly with salt and freshly ground black pepper.
  7. Arrange grilled peaches on top of the arugula.
  8. Drizzle remaining glaze over the peaches. Sprinkle crumbled goat cheese or feta and toasted nuts if using. Gently toss to combine flavors.
  9. Serve immediately while peaches are still slightly warm and greens are crisp.

Notes

If glaze gets too thick, stir in a teaspoon of warm water to loosen. Dry arugula well to avoid soggy salad. Peaches should be firm but ripe for best grilling results. Can substitute nectarines or other stone fruits. For vegan option, omit cheese and use maple syrup instead of honey.
