A fresh and indulgent summer salad combining juicy peaches, creamy burrata, fresh basil, and a tangy balsamic glaze. Quick and easy to prepare, perfect for summer gatherings.

Ingredients

  • 34 ripe but firm fresh peaches, sliced thin
  • 8 ounces (225 g) creamy burrata cheese
  • Fresh basil leaves, whole and bright green
  • 1 to 2 tablespoons (1530 ml) balsamic glaze
  • 2 tablespoons (30 ml) extra virgin olive oil
  • Pinch of flaky sea salt (e.g., Maldon)
  • Freshly ground black pepper, to taste
  • Optional: 2 tablespoons (20 g) toasted pine nuts

Instructions

  1. Rinse and dry the peaches gently under cool water, then pat dry with a clean towel.
  2. Slice the peaches into thin, even wedges about 1/4 inch (0.6 cm) thick using a sharp knife.
  3. Gently tear or slice the burrata into bite-sized pieces and place evenly across your serving platter.
  4. Fan out the peach slices around the burrata, alternating with fresh basil leaves.
  5. Lightly drizzle 2 tablespoons (30 ml) of extra virgin olive oil across the salad, followed by 1 to 2 tablespoons (15-30 ml) of balsamic glaze.
  6. Sprinkle with a pinch of flaky sea salt and freshly ground black pepper to taste.
  7. Optional: Toast pine nuts in a dry pan until golden and fragrant, then scatter over the salad.
  8. Serve immediately while peaches are fresh and burrata remains creamy.

Notes

Use ripe but firm peaches to avoid mushiness. Warm balsamic glaze slightly if too thick for easy drizzling. Prepare peaches and basil in advance and keep chilled separately if needed. Burrata can be substituted with fresh mozzarella for a lighter version or vegan cheese/tofu for dairy-free option. Serve immediately for best flavor and texture.
