Ingredients

  • Halloumi cheese, sliced (¼-inch thick)
  • Manchego cheese, cut into 1-inch wedges
  • Hard goat cheese, crumbled
  • Sliced soppressata or pepperoni
  • Prosciutto, loosely folded
  • Cucumber, thinly sliced (⅛ inch thick)
  • Cherry tomatoes, halved
  • Bell peppers, assorted colors, cut into 3-inch strips
  • Seedless grapes or fresh figs (optional)
  • Marcona almonds or roasted pistachios
  • Olives (Kalamata or Castelvetrano preferred)
  • Fresh herbs like basil or mint leaves
  • Crackers or rustic bread slices (sturdy varieties)
  • Hummus or tzatziki (optional)
  • Extra virgin olive oil (for drizzling)
  • Fresh lemon wedges

Instructions

  1. Slice the halloumi into ¼-inch thick pieces. If grilling, heat a grill pan over medium-high heat and cook halloumi slices for 2-3 minutes per side until golden and grill-marked. Let cool.
  2. Cut manchego into 1-inch wedges and crumble the goat cheese into a small bowl.
  3. Wash and dry all produce thoroughly. Thinly slice cucumbers (⅛ inch thick), halve cherry tomatoes, and cut bell peppers into 3-inch strips. Rinse and dry grapes or figs if using.
  4. Fold prosciutto slices loosely and fan out soppressata or pepperoni on the board.
  5. Place small bowls with olives, nuts, and crumbled goat cheese on the board. Add clusters of sliced cheeses, meats, and veggies, balancing colors and textures. Tuck fresh herbs between sections.
  6. Add crackers or rustic bread slices around the edges. Drizzle extra virgin olive oil over halloumi and place lemon wedges on the side. Optionally, add dollops of hummus or tzatziki in bowls.
  7. Serve immediately or cover loosely with plastic wrap and refrigerate up to 2 hours before guests arrive. Let sit at room temperature for 10 minutes before serving.

Use firm cheeses like halloumi, manchego, and hard goat cheese to prevent melting. Wash and dry vegetables thoroughly to avoid sogginess. Use small bowls for olives and dips to keep the board dry.
