Fresh Sparkling Strawberry Lemonade Recipe with Blueberry Ice Cubes

A refreshing and sparkling summer drink combining pureed strawberries, fresh lemon juice, and sparkling water, served with blueberry ice cubes to keep the flavor vibrant and the drink cold without dilution.

  • 1 pound (450 g) fresh strawberries, hulled and quartered
  • ½ cup (100 g) granulated sugar
  • ¾ cup (180 ml) fresh lemon juice (from about 45 lemons)
  • 4 cups (950 ml) cold sparkling water
  • 1 cup (150 g) blueberries, fresh or frozen
  • ½ cup (120 ml) water (for simple syrup)
  • Optional: a handful of fresh mint leaves
  • Ice cube tray

Instructions

  1. Make the blueberry ice cubes: Rinse 1 cup (150 g) of fresh blueberries under cold water. Fill each compartment of an ice cube tray halfway with water, drop in 3-4 blueberries per cube, and freeze for at least 4 hours or overnight.
  2. Prepare the simple syrup: In a small saucepan, combine ½ cup (120 ml) water and ½ cup (100 g) granulated sugar. Heat over medium heat, stirring occasionally until the sugar dissolves completely. Remove from heat and let cool to room temperature.
  3. Puree the strawberries: In a blender, combine the hulled and quartered strawberries with ¼ cup (60 ml) of the cooled simple syrup. Blend until smooth, about 30-45 seconds. Optionally strain through a fine-mesh sieve for a pulp-free lemonade.
  4. Juice the lemons: Using a citrus juicer, extract about ¾ cup (180 ml) of fresh lemon juice. Remove any seeds.
  5. Combine the lemonade base: In a large pitcher, mix the strawberry puree, lemon juice, remaining simple syrup (about ¼ cup / 50 g), and cold sparkling water (4 cups / 950 ml). Stir gently to combine without losing fizz.
  6. Add optional mint: Lightly bruise a handful of fresh mint leaves and stir into the pitcher for a refreshing herbal hint.
  7. Serve with blueberry ice cubes: Fill glasses with the blueberry ice cubes and pour the sparkling strawberry lemonade over them. Garnish with a lemon wheel or fresh strawberries if desired.

Notes

Do not add ice cubes directly into the pitcher to preserve fizz and blueberry ice cube charm. Ensure simple syrup is completely cooled before mixing to avoid flattening bubbles. Stir gently to maintain sparkle. For less sweetness, reduce sugar or add more sparkling water. Straining strawberry puree is optional for a smoother texture.
