Fresh Watermelon Feta Mint Salad Easy Recipe with Zesty Lime Dressing

A refreshing summer salad combining sweet watermelon, salty feta, and fresh mint with a zesty lime dressing. Perfect for picnics, potlucks, or a light side dish.

  • 4 cups fresh watermelon, cut into bite-sized cubes (seedless is ideal)
  • 1 cup feta cheese, crumbled
  • 1/2 cup fresh mint leaves, roughly chopped
  • 1 small cucumber, peeled and diced
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 1 teaspoon lime zest
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey or agave syrup
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Cut 4 cups (about 600 grams) of seedless watermelon into bite-sized cubes.
  2. Peel and dice 1 small cucumber (about 150 grams) into similarly sized pieces.
  3. Rinse and roughly chop 1/2 cup (about 10 grams) fresh mint leaves.
  4. In a small bowl, whisk together 2 tablespoons (30 ml) fresh lime juice, 1 teaspoon (2 grams) lime zest, 1 tablespoon (15 ml) extra virgin olive oil, and 1 teaspoon (5 ml) honey. Season with salt and freshly ground black pepper to taste.
  5. In a large bowl, combine the watermelon cubes, diced cucumber, and chopped mint. Pour the dressing over and gently toss to coat all ingredients evenly.
  6. Crumble 1 cup (150 grams) of feta cheese over the top and gently toss again.
  7. Chill the salad in the refrigerator for 10-15 minutes before serving to allow flavors to meld.

Notes

Use seedless watermelon for ease. Handle mint gently to avoid bruising. Chill ingredients until just before serving for best freshness. Toss salad close to serving time to prevent sogginess. Dressing can be shaken in a jar if whisk is unavailable.
