A crisp and refreshing summer salad combining juicy watermelon cubes with salty feta, fresh mint, and a zing of lime juice. Perfect for light meals, BBQs, and picnics.

Ingredients

  • 4 cups fresh watermelon, cut into 1-inch cubes (seedless preferred)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 1 teaspoon lime zest (optional)
  • 1 tablespoon extra virgin olive oil
  • Freshly ground black pepper to taste
  • A pinch of sea salt (optional)

Instructions

  1. Cut watermelon into 1-inch cubes, drain excess juice if very juicy.
  2. Roughly chop fresh mint leaves.
  3. In a small bowl, whisk together lime juice, lime zest, olive oil, sea salt, and black pepper.
  4. In a large bowl, gently toss watermelon cubes, crumbled feta, and chopped mint.
  5. Pour the lime dressing over the salad and toss lightly to coat.
  6. Taste and adjust seasoning with more lime juice, salt, or pepper if needed.
  7. Chill the salad for 15 minutes before serving if desired.

Notes

Use seedless watermelon for convenience. Rinse feta lightly if too salty. Add mint just before serving to keep it fresh. Lime zest is optional but recommended for extra zing. Chill salad before serving for best flavor. Leftovers keep up to 24 hours refrigerated; drain excess liquid before serving again.
