  • Mint leaves or peach slices for garnish (optional)

Instructions

  1. Prepare the peaches: Measure 2 cups (300g) of frozen peach slices. If using fresh peaches, peel and slice, then freeze for at least 2 hours beforehand for best texture.
  2. Add ingredients to blender: Place frozen peaches, 1 cup (240ml) chilled sparkling wine, 2 tablespoons (30ml) peach schnapps or nectar (optional), 1 tablespoon (15ml) fresh lemon juice, and 1-2 teaspoons (5-10ml) simple syrup or honey into the blender. Add a handful of ice cubes if you prefer your slushie extra frosty.
  3. Blend until smooth: Pulse the blender on medium speed for 15-30 seconds, then increase to high. Blend for about 45 seconds to 1 minute until the mixture is creamy and slushy. Watch the consistency; it should be thick but pourable. If too thick, add a splash more sparkling wine or a few drops of water. Avoid over-blending to keep the bubbles.
  4. Taste and adjust: Give it a quick taste. Add more sweetener or lemon juice if needed to balance the flavor. Blend briefly again if you add anything.
  5. Serve immediately: Pour into chilled glasses. Garnish with a peach slice or mint leaf. Enjoy right away for best fizz and texture.

Use a dry sparkling wine like brut or extra dry prosecco for best flavor balance. Keep peaches well-frozen to maintain icy texture without watering down the drink.
