Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash, peel, and chop the carrots, cauliflower, bell pepper, zucchini, and onion into evenly sized pieces.
  3. In a large mixing bowl, combine the chopped veggies with olive oil, turmeric, smoked paprika (if using), minced garlic, salt, and pepper. Toss until evenly coated.
  4. Spread the veggies in a single layer on a baking sheet lined with parchment paper or lightly greased. Avoid overcrowding.
  5. Roast for 25-30 minutes, stirring halfway through, until veggies are tender and golden.
  6. While roasting, cook quinoa or brown rice according to package instructions (about 15-20 minutes). Fluff with a fork.
