Ingredients

  • Baby carrots (washed and peeled if needed)
  • Cucumber slices (thin rounds or half-moons)
  • Cherry tomatoes (washed and whole)
  • Snap peas or green beans (trimmed)
  • Hummus (classic or flavored)
  • Greek yogurt mixed with lemon juice and dill
  • Natural peanut butter or almond butter
  • Mixed nuts and seeds (almonds, pumpkin seeds, or sunflower seeds)
  • Whole grain crackers or pita chips (optional)
  • Fresh herbs like mint or basil for garnish (optional)

Instructions

  1. Wash and prep fruits and veggies thoroughly under cold water (about 5 minutes). Core and slice apples into thin wedges about 1/4-inch thick. Toss apple slices in lemon juice or soak briefly in water with lemon to prevent browning.
  2. Slice cucumbers into half-moons or rounds, halve strawberries, and trim snap peas or green beans. Arrange fruits and veggies on a large serving board in small clusters or rows for a colorful presentation (5-7 minutes).
  3. Spoon hummus, Greek yogurt dip, and nut butter into small bowls or ramekins. Place them strategically around the board for easy access. If using crackers or pita chips, tuck them between fruit and veggie clusters.
  4. Scatter mixed nuts and seeds across the board for added crunch and interest. Add fresh herbs like mint or basil for garnish if desired.
  5. Admire your snack board and serve fresh and chilled. Total prep time is about 10-12 minutes.

To prevent apple slices from browning, toss them in lemon juice or soak briefly in lemon water. Keep dips chilled in small bowls to maintain freshness.
