  • 3 tablespoons honey (preferably local, raw honey)
  • 2 tablespoons sriracha sauce (adjust based on heat preference)
  • 1 tablespoon soy sauce (use tamari for gluten-free)
  • 1 teaspoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger (optional)
  • Salt and pepper to taste
  • 1 cup jasmine rice (rinsed until water runs clear)
  • 1 ¾ cups water
  • Pinch of salt
  • 1 large cucumber, thinly sliced or julienned
  • ¼ cup rice vinegar
  • 1 tablespoon sugar or honey
  • 1 teaspoon sesame oil
  • 2 tablespoons chopped fresh cilantro or mint (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line your baking dish with foil or parchment paper for easy cleanup.
  2. In a small bowl, whisk together honey, sriracha, soy sauce, rice vinegar, minced garlic, and grated ginger until smooth. Set aside.
  3. Season the salmon fillets lightly with salt and pepper on both sides. Place them skin-side down in the baking dish.
  4. Brush the glaze generously over the top of each fillet, reserving about 1 tablespoon for later.
  5. Bake the salmon in the preheated oven for 12–15 minutes, depending on thickness, until the fish flakes easily with a fork and the glaze is bubbly and caramelized around the edges.
  6. While salmon bakes, rinse rice under cold water until water runs clear. Combine rinsed rice, water, and a pinch of salt in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes. Turn off heat and let it sit, covered, for 10 minutes before fluffing with a fork.
  7. In a bowl, whisk rice vinegar, sugar (or honey), sesame oil, salt, and pepper until sugar dissolves. Add sliced cucumber and toss to coat. Stir in chopped herbs if using. Let sit for at least 10 minutes to marinate.
  8. When salmon is done, remove from oven and brush with the reserved glaze for an extra glossy finish.
  9. Serve each salmon fillet over a bed of jasmine rice with a generous scoop of cucumber slaw on the side. Enjoy immediately.
