  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • 2 large eggs, room temperature
  • ¾ cup (150g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • ½ cup (120ml) vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups (about 2 medium) grated zucchini, squeezed dry
  • 1 cup (175g) semi-sweet chocolate chips
  • Optional: ½ cup chopped walnuts or pecans
  • Optional: ¼ cup unsweetened shredded coconut

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Grate zucchini and squeeze out excess moisture using a clean kitchen towel.
  3. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In a large bowl, beat eggs, granulated sugar, and brown sugar until smooth. Slowly add oil and vanilla extract, mixing well.
  5. Fold grated zucchini into the wet mixture. Gradually add dry ingredients, folding gently until just combined.
  6. Fold in chocolate chips and nuts if using. Save some chocolate chips to sprinkle on top.
  7. Pour batter into prepared loaf pan and sprinkle reserved chocolate chips on top.
  8. Bake for 50-60 minutes, checking doneness with a toothpick. Tent with foil if top browns too quickly.
  9. Cool bread in pan for 15 minutes, then transfer to a wire rack to cool completely.

Notes

Squeeze zucchini dry to avoid sogginess. Do not overmix batter to keep bread tender. Use room-temperature eggs for better texture. Tent with foil if top browns too fast. Store wrapped tightly at room temperature up to 3 days or freeze slices up to 3 months.
