Instructions

  1. In a large heavy-bottomed saucepan, combine chopped strawberries, granulated sugar, and fresh lemon juice. Stir gently and let sit for 10 minutes to draw out juices.
  2. Place the pan over medium heat and bring the mixture to a gentle boil. Reduce heat to low and simmer uncovered for 25-30 minutes, stirring occasionally until thickened and fruit is softened but still holds shape.
  3. Stir in 1 tablespoon unsalted butter until glossy. Remove from heat and let cool slightly.
  4. In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  5. Add cold diced butter to dry ingredients and work in with pastry cutter or fingers until mixture resembles coarse crumbs with pea-sized pieces.
  6. Pour cold buttermilk into the flour and butter mixture and stir gently until just combined; dough will be sticky and rough.
  7. Drop spoonfuls of dough onto a parchment-lined baking sheet about 2 inches apart.
  8. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes until tops are golden and biscuits spring back when touched.
  9. Transfer biscuits to a cooling rack for 5 minutes. Serve warm with generous spoonfuls of strawberry preserves.
