  • 2 cups fresh or frozen huckleberries (about 300 g), thaw slightly if frozen
  • 3 tablespoons honey (local wildflower honey preferred)
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 cup whole milk (240 ml)
  • 1/4 cup granulated sugar (50 g)
  • 3 large egg yolks (room temperature)
  • 3 tablespoons cornstarch (25 g)
  • 2 tablespoons unsalted butter, softened (30 g)
  • 1 teaspoon vanilla bean paste or extract

Instructions

  1. Make the Tart Crust: In a large bowl, whisk together flour, sugar, and salt. Add cold, cubed butter and blend until mixture resembles coarse crumbs with pea-sized pieces. Add ice water one tablespoon at a time, mixing gently until dough comes together. Wrap dough in plastic and chill for at least 30 minutes.
  2. Prepare the Honey Roasted Huckleberries: Preheat oven to 375°F (190°C). Toss huckleberries with honey, lemon juice, and vanilla extract in a small bowl. Spread in a single layer on a parchment-lined baking sheet. Roast for 12-15 minutes until soft and caramelized but not bursting. Remove and let cool slightly.
  3. Roll Out the Tart Dough: Lightly flour work surface and roll chilled dough into a 12-inch (30 cm) circle. Transfer to tart pan, pressing into edges and trimming excess. Prick bottom with fork. Chill for 15 minutes.
  4. Blind Bake the Crust: Line crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes. Remove weights and parchment, bake another 8-10 minutes until golden and set. Let cool completely.
  5. Make the Vanilla Pastry Cream: Heat milk in saucepan just to simmer. In a bowl, whisk sugar, egg yolks, and cornstarch until smooth. Slowly pour hot milk into egg mixture while whisking to temper eggs. Return mixture to saucepan and cook over medium heat, whisking constantly until thickened and bubbling (3-5 minutes). Remove from heat, whisk in butter and vanilla. Strain through sieve if desired. Cover with plastic wrap pressed on surface and chill.
  6. Assemble the Tart: Spoon chilled pastry cream into cooled tart shell, smoothing surface. Arrange honey roasted huckleberries evenly on top. Chill tart for at least 1 hour before serving.

Notes

Do not overwork the dough to keep it tender. Roast berries gently to caramelize without bursting. Temper eggs carefully when making pastry cream to avoid curdling. Chill crust between steps to prevent shrinking. If pastry cream thickens too much after chilling, whisk gently to restore creaminess. Blind bake crust with weights to avoid soggy bottom.
