Perfect Portuguese Grilled Sardines Recipe with Lemon and Olive Oil

A simple and authentic Portuguese recipe for grilled sardines seasoned with lemon, olive oil, and sea salt, delivering a smoky, juicy, and flavorful coastal dish ready in under 20 minutes.

  • 68 fresh whole sardines, cleaned and gutted with heads on
  • 2 tablespoons extra virgin olive oil
  • 1 fresh lemon, juiced and wedges for serving
  • Coarse sea salt (such as Maldon or Portuguese sea salt), to taste
  • Fresh parsley, chopped (optional, for garnish)
  • Freshly cracked black pepper, to taste
  • 12 garlic cloves, thinly sliced or crushed (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat (around 400°F / 200°C).
  2. Rinse each sardine under cold water and pat dry thoroughly with paper towels. Remove innards if not already done.
  3. Place sardines in a mixing bowl and drizzle with 2 tablespoons of extra virgin olive oil. Add a pinch of coarse sea salt and freshly cracked black pepper. Toss gently to coat. Add sliced garlic if using.
  4. Lay sardines directly on the hot grill. Cook for 3-4 minutes per side until skin is charred and blistered and flesh is opaque and flakes easily.
  5. Flip carefully using tongs or a fish spatula to keep skin intact.
  6. Transfer sardines to a serving platter. Squeeze fresh lemon juice over the top, drizzle a little more olive oil, and sprinkle with chopped parsley.
  7. Serve immediately with lemon wedges on the side.

Notes

Pat sardines dry thoroughly before grilling to ensure crisp skin. Use a hot grill and cook quickly to keep sardines juicy. Flip gently to avoid tearing skin. Add flaky sea salt just before serving for best texture. If no grill is available, use a broiler or cast iron pan with broiler finish. Leftovers keep up to 2 days refrigerated; reheat gently in a skillet to maintain texture.
