This roasted delicata squash with maple glaze is the kind of recipe that makes people who claim they don’t like squash suddenly ask for seconds. The maple glaze caramelizes in the oven, creating gorgeous golden edges that are slightly crispy and deeply flavorful.

  • 2 medium delicata squash (about 1.5 pounds total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon sea salt, plus more to finish
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne pepper (optional but recommended)
  • 45 fresh thyme sprigs (optional)
  • Flaky sea salt for finishing (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven. Line a baking sheet with parchment paper.
  2. Wash the delicata squash thoroughly and pat dry. Trim off the ends and slice crosswise into 1/2-inch thick rings. Scoop out the seeds and stringy pulp from the center of each ring.
  3. In a small mixing bowl, whisk together the maple syrup, olive oil, sea salt, black pepper, and cayenne pepper (if using).
  4. Arrange the squash rings in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  5. Brush about half of the maple glaze over the tops of the squash rings. Reserve the remaining glaze.
  6. Roast for 12 minutes. The squash should be starting to soften and the edges will begin to caramelize.
  7. Remove the baking sheet from the oven. Carefully flip each squash ring over. Brush the tops with the remaining maple glaze. If using fresh thyme, tuck a few sprigs between the rings.
  8. Roast for another 10-12 minutes, or until the squash is tender when pierced with a fork and the edges are deeply caramelized and slightly crispy.
  9. Remove from the oven and let cool on the pan for 2-3 minutes. Transfer to a serving platter, sprinkle with flaky sea salt and fresh thyme leaves (if using), and serve warm or at room temperature.

Notes

For extra caramelization, switch the oven to broil for the last 1-2 minutes of roasting, watching carefully to prevent burning. Don’t overcrowd the pan to ensure proper roasting. Slice squash evenly for consistent cooking. Maple syrup can burn quickly, so brushing it on halfway through roasting is recommended. Season in layers for best flavor.
