  • 1 teaspoon flaky sea salt, plus more for sprinkling
  • 1 cup (90 g) old-fashioned rolled oats
  • 1/2 cup (60 g) all-purpose flour (or oat flour for gluten-free)
  • 1/2 cup (110 g) light brown sugar, packed (for topping)
  • 1/2 cup (113 g) cold unsalted butter, cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Make the Salted Caramel Sauce: Place 1 cup granulated sugar in a medium, light-colored saucepan over medium heat. Do not stir. Let it melt, swirling the pan occasionally, until deep amber. Add 6 tablespoons butter (mixture will bubble), whisk until melted. Slowly drizzle in 1/2 cup heavy cream while whisking. Remove from heat, stir in 1 teaspoon flaky sea salt. Let cool 10 minutes.
  2. Prepare the Apples: Preheat oven to 350°F (175°C). Peel, core, and slice apples into 1/4-inch thick pieces. In a large bowl, toss apples with 1/4 cup granulated sugar, 1/4 cup brown sugar, 2 tablespoons flour, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, 1 tablespoon lemon juice, and 1 teaspoon vanilla extract until evenly coated.
  3. Make the Oat Crumble Topping: In a medium bowl, combine 1 cup rolled oats, 1/2 cup flour, 1/2 cup brown sugar, 1/2 teaspoon cinnamon, and 1/4 teaspoon salt. Whisk. Add cold butter cubes. Using a pastry cutter or fingers, work butter into dry ingredients until mixture resembles coarse meal with some pea-sized butter chunks.
  4. Assemble the Crisp: Spread apple mixture evenly into a 9×13-inch baking dish or 10-inch cast iron skillet. Pour salted caramel sauce over the top (do not stir). Sprinkle oat crumble topping evenly over apples and caramel (do not press down).
