Quick One-Pot Lemon Garlic Pasta with Shrimp

A quick and easy one-pot pasta dish featuring linguine, shrimp, and a bright lemon garlic sauce, perfect for busy weeknights and minimal cleanup.

Ingredients

  • 8 ounces linguine or spaghetti
  • 3 cups low-sodium chicken broth or vegetable broth
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • Juice and zest of 1 large lemon
  • 1/4 teaspoon red pepper flakes
  • Salt and freshly ground black pepper, to taste
  • 12 ounces raw shrimp, peeled and deveined
  • 1 tablespoon unsalted butter (optional)
  • 2 tablespoons fresh parsley, chopped
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Peel and devein the shrimp if not already done. Mince the garlic, zest and juice the lemon, and chop the parsley.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add minced garlic and red pepper flakes and sauté for about 1 minute until fragrant, being careful not to brown the garlic.
  3. Add the dry pasta and pour in 3 cups of chicken broth. Stir quickly to distribute the pasta evenly. Increase heat to medium-high and bring to a gentle boil, stirring occasionally, for 6-8 minutes.
  4. When the pasta is about halfway cooked (around 4 minutes in), nestle the shrimp into the liquid and pasta. Add 1 tablespoon of butter over the shrimp if using. Stir gently.
  5. Cook together until pasta is tender and shrimp are opaque and pink, about 4-5 more minutes. The starch from the pasta will thicken the broth into a light sauce.
  6. Remove the pan from heat. Stir in lemon juice and zest, season with salt and freshly ground black pepper to taste, and toss to coat evenly.
  7. Sprinkle chopped parsley over the top and add grated Parmesan if desired. Serve immediately.

Notes

If pasta absorbs too much liquid before cooking through, add a splash more broth or water as needed. Avoid overcooking shrimp to prevent rubbery texture. For dairy-free, omit butter and Parmesan or use plant-based alternatives. Stir frequently to prevent pasta sticking.
