These quick pickled cherry tomatoes with garlic and dill are tangy, garlicky, and come together in about fifteen minutes of active work. They’re perfect for snacking, adding to salads, or serving on a cheese board.

  • 2 pints cherry tomatoes (about 1 pound or 450g)
  • 45 cloves garlic, thinly sliced
  • 1/2 cup fresh dill, roughly chopped
  • 1 cup white wine vinegar (240ml)
  • 1 cup water (240ml)
  • 2 tablespoons granulated sugar (25g)
  • 1 tablespoon kosher salt (18g)
  • 1 teaspoon black peppercorns
  • 1 teaspoon mustard seeds
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 large or 2 small bay leaves

Instructions

  1. Wash cherry tomatoes and pat dry. Using a sharp paring knife, make a small X-shaped slit on the bottom of each tomato.
  2. Peel garlic cloves and slice thinly. Roughly chop fresh dill.
  3. Layer tomatoes, garlic slices, and dill in a clean 1-quart glass jar. Tuck the bay leaf in the middle.
  4. In a medium saucepan, combine white wine vinegar, water, sugar, kosher salt, black peppercorns, mustard seeds, and red pepper flakes (if using). Bring to a boil over medium-high heat, stirring occasionally to dissolve sugar and salt. Boil for 1 minute.
  5. Carefully pour the hot brine over the tomatoes in the jar, filling to the top and leaving about 1/4 inch headspace. Ensure tomatoes are completely submerged.
  6. Let the jar cool on the counter for about 30 minutes. Once cooled to room temperature, screw on the lid and transfer to the refrigerator.
  7. Refrigerate for at least 24 hours before eating. Flavor peaks around day 3.

Notes

Don’t skip the X-shaped slit on each tomato—it allows brine to penetrate without turning tomatoes mushy. Use kosher salt, not iodized salt, to avoid off-flavors. Garlic may turn blue or green due to a natural reaction with vinegar; this is harmless. These are refrigerator pickles and not suitable for shelf-stable canning.
