  • 3 medium ripe fresh peaches, peeled and sliced
  • 1 cup granulated sugar (200 g), adjust to taste
  • 8 cups water (divided into boiling and cold)
  • 2 tablespoons freshly squeezed lemon juice (optional but recommended)
  • Ice cubes for serving

Instructions

  1. Bring 4 cups (950 ml) of water to a rolling boil in a kettle or pot.
  2. Place the 6 black tea bags into a large heatproof pitcher and pour the boiling water over them. Steep for 6 to 8 minutes depending on desired strength. Remove tea bags gently, squeezing to extract flavor without over-steeping.
  3. While tea steeps, peel and slice peaches. In a small saucepan, combine sliced peaches, sugar, and 4 cups (950 ml) cold water. Bring to a gentle simmer over medium heat, stirring until sugar dissolves. Simmer for about 5 minutes to infuse peach flavor.
  4. Strain the peach syrup mixture through a fine mesh sieve into the pitcher with the steeped tea. Press peach slices lightly to release juice, then discard solids.
  5. Stir in fresh lemon juice to brighten flavor. Refrigerate for at least 1 hour to chill and allow flavors to meld.
  6. Serve over ice cubes, garnished with a fresh peach slice or mint sprig if desired.

Notes

Do not over-steep tea to avoid bitterness. Use ripe peaches for best flavor. Sugar can be substituted with honey, agave, coconut sugar, or maple syrup for different sweetness profiles. Chilling for at least 1 hour improves flavor melding. Prepare peach syrup the night before to save time. Lemon juice adds a bright tang and balances sweetness.
