These stuffed jalapeño poppers combine creamy buffalo chicken with a smoky roasted pepper for a perfect game day snack that’s spicy, creamy, and crunchy.

  • 12 medium-sized fresh jalapeños
  • 1 ½ cups shredded cooked chicken (rotisserie chicken recommended)
  • 8 ounces cream cheese, softened
  • ⅓ cup buffalo sauce (Frank’s RedHot recommended)
  • 1 teaspoon ranch seasoning
  • ½ cup shredded sharp cheddar cheese
  • ¼ cup cooked and crumbled bacon bits (optional)
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wearing gloves, slice each jalapeño in half lengthwise and carefully remove the seeds and membranes using a small spoon. Set aside on a lined baking sheet with the cut side up.
  3. In a mixing bowl, combine shredded cooked chicken, softened cream cheese, buffalo sauce, ranch seasoning, shredded cheddar, bacon bits (if using), garlic powder, and black pepper. Stir until smooth and creamy.
  4. Fill each jalapeño half generously with the buffalo chicken mixture using a spoon or small cookie scoop.
  5. Drizzle olive oil over the stuffed jalapeños.
  6. Bake in the preheated oven for 18-22 minutes, or until jalapeños are tender and filling is bubbly and slightly browned.
  7. Let the poppers rest for 5 minutes before serving.

Notes

Soften cream cheese before mixing for smooth filling. Wear gloves when handling jalapeños to avoid irritation. For a crispier top, broil for last 2 minutes watching closely. To reduce heat, remove seeds and membranes and soak jalapeños in cold water for 20-30 minutes. Can substitute mini sweet peppers for milder flavor. Air frying at 375°F for 10-12 minutes is an alternative cooking method.
