  • 46 bone-in, skin-on chicken thighs
  • 1/4 cup honey (raw or wildflower preferred)
  • 1/3 cup low-sodium soy sauce
  • 45 garlic cloves, minced
  • 2 tablespoons rice vinegar
  • 1 teaspoon fresh ginger, grated (optional)
  • 2 tablespoons olive oil or vegetable oil
  • Black pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels and season both sides generously with black pepper. Let rest for 5 minutes.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, rice vinegar, and grated ginger until smooth. Set aside.
  3. Heat a large heavy-bottom skillet or cast-iron pan over medium-high heat and add the oil. Heat until shimmering but not smoking (about 2 minutes).
  4. Place chicken thighs skin-side down in the hot pan. Press down lightly with a spatula or tongs for even contact. Cook without moving for 8-10 minutes until skin is deep golden brown and crispy.
  5. Flip the chicken and cook the other side for 5-7 minutes until cooked through (internal temperature 165°F / 74°C).
  6. Lower heat to medium-low. Pour the honey garlic glaze over the chicken and spoon the sauce over the thighs. Simmer gently for 3-5 minutes until the glaze thickens and coats the chicken.
  7. Taste the sauce and add more vinegar or chili flakes if desired. Remove from heat and let the chicken rest for a couple of minutes before serving.

Notes

Pat chicken dry to ensure crispy skin. Avoid crowding the pan to prevent steaming. Add glaze at the end to avoid burning sugars. Press chicken down during searing for even crispiness. Reheat leftovers gently in a skillet or oven to maintain crispy skin.
