  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup full-fat eggnog
  • 1 large egg, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly grated nutmeg
  • 1 1/2 cups confectioners’ sugar, sifted
  • 2–3 tablespoons eggnog (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)
  • 1/4 teaspoon nutmeg (for glaze/garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and freshly grated nutmeg. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  4. Add the egg and vanilla extract to the butter mixture and beat until combined. Slowly pour in the 1/2 cup of eggnog and mix on low speed until just incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  6. Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hour.
  7. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are barely golden and centers look soft.
  9. Let cookies sit on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely.
  10. Whisk together confectioners’ sugar, 2 tablespoons eggnog, vanilla, and nutmeg to make the glaze. Add more eggnog if needed for consistency.
  11. Drizzle the glaze over the cooled cookies and sprinkle with extra nutmeg if desired.

Notes

Chilling the dough is crucial to prevent spreading. Measure flour by spooning it into the cup and leveling it off to avoid dry cookies. Store in an airtight container with a slice of bread to maintain softness. Do not refrigerate as it will harden the cookies.
