  • 1 tsp toasted sesame seeds (optional)
  • Fresh cilantro or parsley (small handful, optional)

Instructions

  1. Prepare the Soft-Boiled Eggs: Bring a medium saucepan of water to a gentle boil. Carefully lower 2 large eggs into the water and boil for exactly 6 minutes for a creamy yolk. Immediately transfer eggs to an ice bath to stop cooking. Peel once cool and set aside.
  2. Make the Broth: In your large pot, heat sesame oil over medium heat. Add minced garlic and sliced ginger, stirring until fragrant (about 1-2 minutes). Pour in vegetable or chicken broth and water. Bring to a simmer.
  3. Add Miso and Chili: Lower the heat to gentle simmer. In a small bowl, whisk miso paste with a ladle of hot broth until smooth. Stir this miso mixture back into the pot. Then sprinkle in dried chili flakes, stirring well. Let broth simmer for 15-20 minutes to marry flavors; avoid boiling to keep miso’s delicate taste intact.
  4. Crisp the Mushrooms: While broth simmers, heat your skillet over medium-high heat. Add a splash of oil, then sauté sliced mushrooms until golden and crispy on edges (about 5-7 minutes). Season lightly with salt. Set aside.
  5. Cook the Noodles: Bring a separate pot of water to boil. Add ramen noodles and cook according to package instructions (usually 3-4 minutes for fresh, 5-6 for dried). Drain and rinse briefly under warm water to stop cooking. Divide noodles between bowls.
  6. Assemble the Ramen Bowls: Ladle hot broth over noodles. Halve soft-boiled eggs and place on top. Add crispy mushrooms and garnish with sliced green onions, nori strips, and optional sesame seeds or chili oil. Serve immediately.

Do not boil miso to preserve probiotics and flavor. Start soft-boiled eggs first to multitask. Dry mushrooms well before sautéing for crispiness. Use fresh noodles if possible for better texture.
