  • 2 teaspoons fresh thyme, finely chopped (or 1 teaspoon dried thyme)
  • 1 teaspoon fresh rosemary, finely chopped (optional)
  • Salt and black pepper to taste
  • 1 tablespoon butter (for finishing the pan sauce)
  • 1 teaspoon all-purpose flour (optional, to thicken sauce)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and 1 clove minced garlic.
  2. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear chicken breasts for about 2 minutes per side until golden brown. Remove and set aside.
  3. Pour chicken broth into the crockpot. Stir in remaining minced garlic, thyme, rosemary, salt, and pepper.
  4. Place seared chicken breasts into the crockpot broth mixture. Cover and cook on low for 2 to 3 hours or on high for 1 to 1.5 hours until internal temperature reaches 165°F (74°C).
  5. Remove chicken breasts and keep warm. Pour crockpot broth mixture into the skillet used for searing, discarding solids if desired.
  6. Place skillet over medium heat. Whisk in flour if using. Add Dijon mustard and butter, stirring until sauce is glossy and slightly thickened (about 3 minutes). Adjust seasoning as needed.
  7. Spoon herb pan sauce over chicken breasts and garnish with extra fresh thyme if desired.

Use a meat thermometer to ensure chicken reaches 165°F for safety and tenderness. Searing the chicken before slow cooking locks in juices and adds flavor. For a dairy-free version, substitute butter with olive oil. Flour can be replaced with almond flour for gluten-free sauce. If crockpot is unavailable, bake chicken covered at 350°F for 25-30 minutes and prepare sauce in skillet.
