  • 2 large eggs, room temperature

  • 1 3/4 cups (220g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup (90g) toasted walnuts, chopped

Instructions

  1. Brown the butter: In a medium saucepan over medium heat, melt the butter. Stir constantly until it foams, turns golden, then brown with nutty aromas (about 5 minutes). Remove from heat and let cool slightly.
  2. Toast the walnuts: While the butter cools, toast the chopped walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant and golden. Stir frequently and set aside to cool.
  3. Mix dry ingredients: In a bowl, whisk together flour, baking soda, and salt.
  4. Combine sugars and eggs: In a large mixing bowl, whisk granulated sugar, light brown sugar, and eggs until smooth and slightly thickened (about 2 minutes).
  5. Add bananas and vanilla: Stir mashed bananas and vanilla extract into the sugar mixture until combined.
  6. Incorporate brown butter: Slowly pour the warm browned butter into the banana mixture, stirring gently.
  7. Fold in dry ingredients and walnuts: Add dry ingredients in two additions, folding gently with a spatula just until combined. Fold in toasted walnuts last.
  8. Prepare the pan: Grease and line a 9×5 inch loaf pan with parchment paper, leaving an overhang for easy lifting.
  9. Bake: Pour batter into the pan and smooth the top. Bake at 350°F (175°C) for 55-65 minutes. Check at 55 minutes with a toothpick; it should come out with a few moist crumbs but no wet batter.
  10. Cool: Let bread cool in the pan for 15 minutes, then lift out using parchment overhang and transfer to a cooling rack.
