A quick and easy homemade immune tonic that respects tradition but bends the rules for real life. No weeks of waiting, no worrying about mold—just a bold, spicy, ridiculously effective tonic that comes together in an afternoon and keeps for months in the fridge.

  • 2 cups raw apple cider vinegar (with the mother)
  • 34 inches fresh ginger root, thinly sliced
  • 23 inches fresh turmeric root, thinly sliced
  • 23 inches fresh horseradish root, peeled and grated or thinly sliced
  • 68 garlic cloves, smashed
  • 1/2 medium yellow onion, thinly sliced
  • 1 small fresh jalapeño or habanero, sliced (seeds removed for less heat)
  • 23 tablespoons raw honey
  • 1 medium lemon, thinly sliced
  • 1/2 medium orange, thinly sliced
  • 1 fresh rosemary sprig (or 1 teaspoon dried)
  • 1 teaspoon whole black peppercorns
  • 1/4 teaspoon ground cayenne pepper (optional)

Instructions

  1. Wash and scrub all roots thoroughly. Slice ginger, turmeric, and horseradish into thin rounds (about 1/8 inch thick). Smash garlic cloves and let sit for 10 minutes. Slice onion into thin half-moons. Slice jalapeño, lemon, and orange into thin rounds.
  2. Layer ingredients in a quart-size glass jar: start with ginger, turmeric, and horseradish at the bottom. Add garlic, onion, and jalapeño. Tuck in citrus slices and rosemary sprig along the sides. Sprinkle in black peppercorns and cayenne if using.
  3. Pour apple cider vinegar into a small saucepan and warm over medium heat to 150-160°F (hot but not boiling). Tiny bubbles will form around the edges.
  4. Pour hot vinegar over the ingredients in the jar, making sure all solids are submerged. Use a chopstick or butter knife to release trapped air bubbles.
  5. Drizzle in raw honey and stir gently. Screw lid on tightly and shake well. Let cool on counter for about 1 hour before moving to the fridge.
  6. Refrigerate for at least 24 hours. Taste after 12 hours if desired; 24 hours is the sweet spot for bold flavor. For stronger flavor, steep up to 48 hours.
  7. Strain through a fine-mesh strainer or double layer of cheesecloth into a large bowl or measuring cup. Press gently on solids with the back of a spoon to extract liquid. Discard solids.
  8. Transfer strained fire cider into clean glass storage bottles using a funnel. Store in the refrigerator for up to 6 months.

Notes

The vinegar will stain everything it touches—cutting boards, countertops, towels, fingers. Turmeric is notorious for this. Line your counter with parchment paper and wear old clothes when making a big batch. If you get orange fingers, a paste of baking soda and water will help lift the stain. The flavor improves after the first week in the fridge.
