Transform leftover pumpkin seeds into a crunchy, golden, and fragrant snack with this easy cinnamon sugar roast. Simple ingredients and a tested technique ensure perfect crispiness every time.

Ingredients

Scale
  • 1 cup raw pumpkin seeds (pepitas)
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon neutral oil (e.g., avocado or light olive oil)
  • 2 tablespoons granulated white sugar
  • 1 to 1.5 teaspoons ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325°F (165°C).
  2. If using fresh seeds, rinse thoroughly under cold water to remove pulp, then pat dry firmly with towels. Allow to air dry for up to 2 hours or toast in a dry pan on low heat for 5 minutes to remove moisture.
  3. In a large mixing bowl, whisk together the melted butter and neutral oil.
  4. Add the dry seeds to the bowl and toss thoroughly until every seed is coated in a thin layer of fat.
  5. In a small bowl, mix the sugar, cinnamon, salt, and vanilla extract.
  6. Sprinkle the dry mixture over the coated seeds and toss again until evenly dusted. Break up any sugar clumps.
  7. Line a baking sheet with parchment paper and spread the seeds in a single layer. Do not overcrowd the pan.
  8. Roast for 15-20 minutes, stirring every 5 minutes to ensure even browning.
  9. Remove from oven when golden brown and fragrant. The seeds will continue to crisp as they cool.
  10. Let cool completely on the pan before storing in an airtight container.

Notes

Ensure seeds are completely dry before roasting to prevent steaming and chewiness. Stirring every 5 minutes is crucial to prevent the sugar from burning. Seeds will feel soft when hot but will crisp up as they cool to room temperature.
