Light, airy, and crisp meringue cookies shaped like ghosts. These no-bake treats rely on air drying for a delicate texture and are naturally gluten-free, making them perfect for Halloween or any occasion.

  • 2 large egg whites, room temperature
  • 1/2 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon pure vanilla extract
  • Gel food coloring (optional)

Instructions

  1. Line a baking sheet with parchment paper and ensure egg whites are at room temperature.
  2. Place egg whites and cream of tartar in a clean glass or stainless steel mixing bowl. Whip on medium speed until frothy and soft peaks form (3-4 minutes).
  3. With the mixer running on medium-high, slowly add granulated sugar one tablespoon at a time. Continue mixing until glossy and stiff peaks form (3-4 minutes).
  4. Turn off the mixer and gently fold in vanilla extract with a spatula.
  5. Scoop or pipe the meringue onto the parchment paper, shaping into ghost forms. Keep them relatively thin to ensure even drying.
  6. Let the cookies dry at room temperature for at least 4 hours, or overnight, until completely dry and not sticky to the touch.

Notes

Ensure all equipment is completely clean and free of any fat or oil, as this prevents egg whites from whipping. If the humidity is high, you can dry the cookies in an oven with only the light turned on (no heat). Do not refrigerate as moisture will make them sticky. They can be frozen for up to three months.
